Olimendros was born in 1997 from the enthusiasm of the Muñoz Caravaca family for producing pure olive juice.
Finca Olimendros is a plantation of more than 500 ha of olive and almond trees of different varieties. The farm is located in the northeast of the province of Murcia, in the Cañada de Albatana, at an altitude of 600 m above sea level, with a dry continental-Mediterranean climate and a slightly acidic limestone soil. These factors, together with the irrigation with well water of excellent quality, are differentiating factors that contribute to the microclimate of Olimendros.
The agricultural system that Olimendros uses is that of Integrated Production, a system that makes maximum use of natural, agrochemical and organic resources for environmental protection, respect for diversity and the sustainability of the crop.
The oil mill, located in the very centre of the farm, receives the harvested fruit at the optimum time for harvesting (at the time of the harvest). Once they have been mechanically harvested, they are taken to the oil mill in trailers no more than one metre high to prevent the olives from being crushed.
In the patio of the oil mill the olives are cleaned and, by a process of cold extraction (below 27ºC) and in less than 24 hours of being received, the six monovarietal juices are obtained from the six varieties of olives from the plantation: Arbequina, Picual, Cornicabra, Cuquillo, Hojiblanca y Koroneiki.
The extraction process consists of the olive shake, double centrifugation and decanting, all of which are purely mechanical procedures, at low temperatures and under conditions of careful cleaning.
Once the extra virgin olive oils have been produced, they are carefully stored in the cellar protected from light, extreme temperatures and oxidation.
Quality Marks
Olimendros’ extra virgin oils have two quality brands that guarantee, through external audits, their careful way of doing things. These quality marks are:
Integrated Production and Agri-food Quality Control Region of Murcia.
Integrated Production is a quality agricultural production system that involves a principle of sustainability with the environment, for which it uses practices compatible with the protection and improvement of the environment, natural resources, diversity and conservation of the soil and the landscape.
In each Autonomous Community, technical standards must be complied with, controlled by qualified technical staff from the farm itself who advise on agricultural practices and the rational use of water, fertilisers and agrochemicals.
All the operations are reflected in a Field Notebook and every year an external audit is carried out which attests to the good work and analyses the olive and oil residues to ensure the absence of phytosanitary residues.

On an organoleptic level, Olimendros extra virgins have medium-high fruitiness in all their varieties and blends, and are rich in nuances characteristic of the variety.
Our Productos
Of the six varieties of olives that Olimendros has in its plantation, the six extra virgin single-variety olives, Olimendros brand, are obtained with their own organoleptic notes that make them characteristic.
In addition to these, Olimendros produces a Coupage and a Grand Selection in which it mixes monovarietals in order to obtain an extra virgin with intense fruit, balanced and rich in nuances.
